In Poland Christmas Eve dinner is the most important celebration of the year. It starts when the first star appears in the sky and it is customary to set an extra plate on the Christmas table for an unexpected guest. The dinner traditionally includes twelve dishes (!), which is the symbol of twelve Apostles as well as twelve months. According to tradition, everyone should taste a bit of every meal. Christmas dinner usually starts with beetroot soup (barszcz) served with sauerkraut-mushroom dumplings (pierogi). The absolute must
have is carp, which is eaten just once a year, exceptionally for Christmas. Poppyseed cake (makowiec), ginger bread (piernik) and dried fruit compote are served for dessert.
